Pico de Gallo Salad

The Griffin Restaurant, El Dorado  | Serves 2

Ingredients:
1 tablespoon sweet onion, brunoise cut
1 tablespoon gold bell pepper, brunoise cut
1 tablespoon poblano pepper, brunoise cut
1 tablespoon Roma tomato seeded, brunoise cut
1 tablespoon fresh lime juice
1 tablespoon fresh cilantro, finely chopped
1 splash agave tequila
salt and pepper to taste

Directions: 
Mix all ingredients together in a medium bowl. Chill.

 

Mix Pico de Gallo with a ripe avocado, add it to an omelette or use it as a dip.
